The kitchen is the heart of our operation. We aim to create cherished memories for our guests and crew, with a focus on meals. That way, no matter what hunting or fishing is like, the weather conditions, at least the food is a positive experience.We like to offer healthy, hearty Western meals, served family style. Beef is a staple (we purchase whole cows from Silver Spur Ranch) along with vegetables, salads, and potatoes.Our lodge features a full kitchen. We order groceries from Costco and Sysco. If needed, groceries from town will be authorized at Valley Foods.~ Ensure cleanliness and safety in working, dining, and storage spaces. This includes dishwashing, sweeping, sanitizing, as well as cleaning and organizing the fridge, freezer, and commissary areas.
~ Prepping and preparing grab and go breakfast (breakfast sandwiches, burritos, continental breakfast), cold lunch (sandwich trays) and a family style dinner for up to 12 guests and staff.
~ Baking bread, desserts, and cookies.
~ Menu planning and inventory management.
~ Grocery ordering and inventory management/rotation (supplies and groceries).
~ Preparing meals to include special diets as needed. (Dietary information from guests will be gathered by coordinator and included on schedule).
~ Preparing make-ahead meals that can be reheated on your days off.
~ Full kitchen deep cleaning between groups.
You do not need to be present at the lodge for breakfast or lunch, we just ask that those pre-made options are readily available for guests to grab on their own. Dinner time varies based on shooting light, weather, hunting location in proximity to the lodge, and the group itself, but a good rule of thumb is to plan for 6/6:30 and facilitate things to stay warm until arrival. Once the cleanup from dinner is done, breakfast and lunch are ready for the following day, you are free to leave.
This is a perfect job for someone looking to get a foot in the outfitting world as well as someone looking to learn to hunt or has the potential to learn to guide. You will be the only cook giving you some creative freedom and ability to menu plan around client and seasonal requests. We are also a working cattle ranch and opportunities for full time employment year round if desired. If you have mechanic skills/operate tractors/horse training there is always room on the team for hard working people.
